When it’s time for a party or dinner full chicken roast will be a highlight. It will be finished within no time. The red roasted color the fiery grilled taste and its marvelous size is really appetizing. We used to marinate chicken with usual things such as lemon, turmeric, red chilly powder, pepper powder, ginger and garlic paste. But this doesn’t give the exact taste of what we get from restaurants. So today I thought of sharing this easy healthy oven made the chicken roast. Kids usually get attracted to chicken grilled in the oven than a normal chicken curry. And the only thing you have to spend time marinating chicken. So it’s a better option to fill the table with ease.
The love and happiness of sharing flares when we share from one plate aren’t it. In my family, we all sit together to have a long chat and enjoy food. This is the secret of keeping everyone close bond. I really enjoy family gatherings for this reason. You can share this full chicken roast recipe for all who want.

  1. Clean chicken thoroughly especially inside.
  2. Marinate chicken with all the ingredients and make long shallow cuts on chicken so that marinade gets into it.
  3. Make sure to put some marinade inside also.
  4. Keep for at least 3 hours in the fridge (overnight for better results) or you can marinate and keep in the freezer and use it when needed.
  5. One thing you should thaw it well before cooking or else inside of chicken won’t be cooked perfectly.
  6. Now preheat the oven for 10 minutes with both grill on.
  7. Grill for half-hour then turn it and cook for 15 -30 minutes more.
  8. Cooking time depends on the size of the chicken and oven you are using.

Chicken with skin tastes good but if u are health conscious you can use deskinned , then you have to brush some oil of your choice for a better taste. Salt you have to be very careful as all sauces contain it.

Sometimes I wish if I was in Italy. Not because I didn’t like my Gods own country, but for the simplicity of cooking. Most of the Italian dishes takes only minutes to prepare. But in Kerala you know for lunch normally we have to spend one or two hours in the kitchen. Sometimes I feel lazy to spend so many hours for breakfast, lunch, evening snack and dinner.
This spaghetti I tasted from a restaurant in Italy. My son Kris’s godparents are Italian Nicola and Mina. So Our kumbari’s are Italian. This restaurant is owned by Mina’s mother Luciana who is in her 80’s who still cooks in her restaurant. The dish was super delicious as it’s cooked in a traditional way by Luciana. It contained all the flavors added.
Italian dishes are simple yet elegant.

Ingredients For Spaghetti with Fish Egg(Roe) Recipe

  1. Take a nonstick pan heat some olive oil add slightly crushed garlic salt until it changes its color to light brown. Add nicely chopped fish eggs. Be careful as it can pop out. Turn off the flame.
  2. Place a large bowl with 3/4 water and boil it to cook spaghetti.
  3. Add salt and olive oil into the water. Olive oil is added so that the spaghetti doesn’t stick together.
  4. Refer the packet of spaghetti to know the cooking Time required. In Italy, they say it should be cooked “al dente” which means still firm when bitten.
  5. Once it's done strain it immediately into a spaghetti drainer or big sieve.
  6. He the nonstick pan with fish eggs again and add hot spaghetti into it. Mix well and cook for 2 more minutes. Turn off the flame and serve hot.
