Chocolates! Yes as we all know can win the hearts of children and also adults example me myself .
Talking about chocolates can water ones mouth and when it’s a brownie with melting chocolate on it there is no words to say. A brownie and an ice cream can be Best friends as they join up to make a a fantastic dessert . To be honest I and my husband didn’t use to be a fan of chocolates . But this dessert have winned our hearts . So being in love with this dessert I will highly recommend this recipe to both, those who love chocolates and to those who are not a big fan of it.This photo was taken before the ganache is set in refrigerator cos my kids was impatient to have it. I hope you’ll all love this and let’s move on to the ingredients we need.

  1. Place a thick bottomed pan And melt butter in low flame. And dark chocolate chopped into it and mix it well. Turn off flame.
  2. Grease a baking dish ( refer notes)
  3. Mix all-purpose flour and baking powder and sieve 2or3 times.
  4. Beat eggs well after adding vanilla essence to it.
  5. Add butter and chocolate mixture into beaten eggs and mix well.
  6. Slowly add all-purpose flour and baking powder to this and fold it gently
  7. Add cashews and pour it into the baking dish already set.
  8. Bake in a preheated oven at 180 degrees for 30 to 40 minutes depending on your oven. Check with a skewer stick whether it's done or not.
  9. Let it cool slightly and remove it from the baking dish.
  10. Double boil chocolate and add oil. Spread it on top of your brownie. Place it inside the refrigerator to set. If you want you can serve it as it is or you can serve it by heating a Lil bit and top it with one scoop of vanilla ice cream.

I have used an eight-inch square bake dish. This is a small brownie recipe which can be served for 6 to 8 persons. If you want more quantity you can double all ingredients but take 5 eggs instead of 6. This photo was taken before setting as my kids was impatient to have it.

Sometimes I wish if I was in Italy. Not because I didn’t like my Gods own country, but for the simplicity of cooking. Most of the Italian dishes takes only minutes to prepare. But in Kerala you know for lunch normally we have to spend one or two hours in the kitchen. Sometimes I feel lazy to spend so many hours for breakfast, lunch, evening snack and dinner.
This spaghetti I tasted from a restaurant in Italy. My son Kris’s godparents are Italian Nicola and Mina. So Our kumbari’s are Italian. This restaurant is owned by Mina’s mother Luciana who is in her 80’s who still cooks in her restaurant. The dish was super delicious as it’s cooked in a traditional way by Luciana. It contained all the flavors added.
Italian dishes are simple yet elegant.

Ingredients For Spaghetti with Fish Egg(Roe) Recipe

Directions

  1. Take a nonstick pan heat some olive oil add slightly crushed garlic salt until it changes its color to light brown. Add nicely chopped fish eggs. Be careful as it can pop out. Turn off the flame.
  2. Place a large bowl with 3/4 water and boil it to cook spaghetti.
  3. Add salt and olive oil into the water. Olive oil is added so that the spaghetti doesn’t stick together.
  4. Refer the packet of spaghetti to know the cooking Time required. In Italy, they say it should be cooked “al dente” which means still firm when bitten.
  5. Once it's done strain it immediately into a spaghetti drainer or big sieve.
  6. He the nonstick pan with fish eggs again and add hot spaghetti into it. Mix well and cook for 2 more minutes. Turn off the flame and serve hot.
