Mango birthday cake

Hey all, today I want to share with you the recipe of cake which I made for my son’s birthday last time, which came out well. As my son loves football I made a football-themed cake with Greenfield, a jersey and a ball. I gave a mango flavor and it was a super hit.

The idea of making a mango cake struck me when I was making a cool mango drink with mango Crush as it was Summer. I quickly got excited about my new idea and there were only two days for my son’s birthday. I made a vanilla sponge cake and layered it with sugar syrup, mango Crush, whipping cream and grated chocolate. I was startled by my final output and this is how that wonderful memory ends. After making the cake and layered it with all these items and I gave color to the whipping cream and made the grass for the greenfield and with white fondant, I made the football post then with fondant I made the jersey for my boy and topper it with a football.

  1. Get all the ingredients ready for making cake and grease a cake pan. Preheat the oven to 180 degrees.
  2. Mix flour, baking powder, baking soda, and milk powder. Sieve the powders 2 /3 times.
  3. Beat egg yolks well add sugar powder beat until it becomes off white in color
  4. Beat egg whites with a beater 5 to 6 minutes (beater and bowl should be dry)
  5. To the yolk mix add egg whites and dry powders alternately by folding it.
  6. Transfer it immediately to cake tin tap it to remove air bubbles. And bake for 25 mins or until done.
  7. For layering
  8. Cut cake horizontally into 2 or 3 pieces as u like. Make sugar syrup and add vanilla essence. Let it cool then pour it into a sprayer. Soak one layer cake by spraying the syrup. Place a steel bowl and beater string in the freezer for at least 1/2 hr. Take another bowl with chilled water to place it under while beating whipping cream. Beat for 10 minutes or until soft peaks form. Spread some mango crush on the cake like we spread jam and then Layer whipped cream on top of it Springle some grated white chocolate. Then continue the same with the next layer. After placing the last layer soak it and u can spread it by adding colors to the whipped cream. And decorate as per your choice for Mango Cake.

You can add mango pieces instead of crush or both or mango alone. Make sure mangoes are of good taste.

Sometimes I wish if I was in Italy. Not because I didn’t like my Gods own country, but for the simplicity of cooking. Most of the Italian dishes takes only minutes to prepare. But in Kerala you know for lunch normally we have to spend one or two hours in the kitchen. Sometimes I feel lazy to spend so many hours for breakfast, lunch, evening snack and dinner.
This spaghetti I tasted from a restaurant in Italy. My son Kris’s godparents are Italian Nicola and Mina. So Our kumbari’s are Italian. This restaurant is owned by Mina’s mother Luciana who is in her 80’s who still cooks in her restaurant. The dish was super delicious as it’s cooked in a traditional way by Luciana. It contained all the flavors added.
Italian dishes are simple yet elegant.

Ingredients For Spaghetti with Fish Egg(Roe) Recipe

  1. Take a nonstick pan heat some olive oil add slightly crushed garlic salt until it changes its color to light brown. Add nicely chopped fish eggs. Be careful as it can pop out. Turn off the flame.
  2. Place a large bowl with 3/4 water and boil it to cook spaghetti.
  3. Add salt and olive oil into the water. Olive oil is added so that the spaghetti doesn’t stick together.
  4. Refer the packet of spaghetti to know the cooking Time required. In Italy, they say it should be cooked “al dente” which means still firm when bitten.
  5. Once it's done strain it immediately into a spaghetti drainer or big sieve.
  6. He the nonstick pan with fish eggs again and add hot spaghetti into it. Mix well and cook for 2 more minutes. Turn off the flame and serve hot.
